Golden Granola

When hunger pains start gnawing at you, bite back! Crunch into this golden granola of health and happiness!

Store bought granola is not only loaded with sugar, refined flour, and hydrogenated oils, but it also lacks flavor and that personal touch. It is so simple to make your own, and you feel good eating it. It can be eaten on its own, on top of oatmeal, yogurt or other whole grain cereals, or as a snack–—just like trail mix! You can also make it NUT FREE - just add other seeds instead of almonds, blend: hemp, flax, sesame and it’s safe to take to school!

Golden Granola

INGREDIENTS

  • 4 cups rolled oats
  • ¼ cup coconut oil
  • ¾ cup pure organic maple syrup
  • 1 tablespoon rice milk
  • 1 ½ cup oat bran or quinoa flakes
  • ¾ cups sesame seeds
  • ½ cup sunflower seeds
  • ½ cup pumpkin seeds
  • 1 cup coconut flakes
  • ¼ cup flax seeds
  • 1 cup chopped almonds
  • 1 teaspoon sea salt
  • 1 ½ cups of either raisins, apricots, or cranberries

DIRECTIONS

1. Preheat oven to 300F. Combine maple syrup, rice milk and coconut oil in a large saucepan and set aside.

2. Mix remaining ingredients in a large bowl, except raisins, and toss well.

3. Add the oil-maple mixture and stir together really well.

4. Pour mixture into two shallow pans or baking sheets with parchment paper and bake for 15 minutes, stir, and bake for an additional 10 minutes until light golden brown.

5. Remove from oven and stir in raisins, apricots or cranberries.

6. Cool and store in airtight container.

7. Serve in half cup portions and serve with rice or almond milk.
